Cranberry Almond clusters

2 cups of 65% Sunspire dark chocolate chips (from Azurestandard) Spread out in an 8x8 pan, drizzle 1 tsp of Spectrum almond oil (also from azure) over the chips, put in an 200 degree oven for 5-8 min. Watch closely. When its melted, add 2/3 cup of cranberries and 1/2 cup coarsely chopped almonds (also from Azure). Stir together. Spread out, and put in refrigerator to harden. When hard, break into pieces. Haven't we heard there is health benefits from dark chocolate?!!

  2. Grain free waffles, adapted from Danielle Walker's recipe:

    Mix in a blender:
    6 eggs
    1/2 cup pecans
    3/4 cup walnuts
    3/4 cup almond meal
    1 cup of almond or coconut milk (start blending at this point)
    2 TBL of flax seeds, ground
    3 TBL of Organic Creamed Coconut
    1/2 tsp of salt
    1 1/4 tsp of baking soda
    6 TBL of coconut flour, Blend on med speed till the nuts are ground up.
    I have a waffle iron that beeps when its done, so I'm not sure how long to bake, maybe 1 1/2 to 2 minutes?
